This $3.59 Aldi Soup is My Absolute Favorite Comfort Meal

On a seminal episode of Seinfeld, George Costanza declares, “I’m shifting into soup mode.” I understand the sentiment, but I do not need to shift—I’m always in soup mode. There isn’t a better meal on the planet, and nothing will stop me from eating it year-round.

How could I ever get bored with soup! There are so many varieties to enjoy, from broccoli cheddar to minestrone, chicken noodle to crab bisque. I love making a big batch of soup on the weekend, freezing half, and eating the rest throughout the week. If I have some extra bread that needs to be used up, I’ll even make homemade croutons.

But there are weeks when I’m just too busy to make my soup from scratch. That’s when I turn to my trusty Aldi find, the Chef’s Cupboard Rich & Creamy Potato Soup Mix. Yes, I regularly make this bag of instant soup and love every spoonful of it.

Why I Love Aldi’s Chef’s Cupboard Rich & Creamy Potato Soup Mix

Three things make this soup stand out to me: it’s not too salty, it yields eight cup-sized servings, and it’s only $3.59, which works out to be 45 cents per serving. 

Many instant soup mixes can really taste like a spoonful of salt, but that is not the case with this one. It even has small chunks of potato in it, so the texture is really appealing and not at all too sticky or gloppy. Preparing it is easy, too—bring eight cups of water to a rolling boil, whisk in the soup mixture, then let it simmer for 15 minutes.

How I Make Aldi Chef's Cupboard Soup Even Better

This soup is really great on its own, but I also love to customize it based on what I feel like eating, or with foods I’m trying to use up. I usually grate in some cheddar cheese or stir in some sour cream. Bacon bits are another stellar addition to this soup. You can garnish it with chives,  green onions, or any fresh herbs. 

If you’re feeling especially ambitious, you can add in some frozen vegetables while the soup is simmering. Frozen peas or frozen spinach make great add-ins to this creamy base. 

Serve it alongside your favorite sandwich for lunch, or enjoy a double serving for dinner with some crusty bread. It’s really pretty impossible to mess up, and it takes 20 minutes to go from stovetop to table with minimal effort and only one pot to clean.
