Aldi’s $3.89 Butternut Squash Soup Is Back for Fall, and I’m Stocking Up

I used to waffle when people asked me to pick my favorite food. It could be homemade pizza, or maybe crispy, gooey mozzarella sticks. I also like roasted broccoli so much that I could eat an entire sheet pan of it by myself.

But the older I get, the more confident I am, and I know that I love soup. Whenever I go to a restaurant, I always ask what the soup of the day is. When I worked in a restaurant, I would volunteer to go in on Tuesdays, because that’s when we served our best soup. (It was chipotle corn chowder, if you want to know.)

Soup comes in so many forms that I can never get bored with it. In fact, I try to make a big pot of soup at least once a week, freezing the leftovers so I always have an easy meal ready to go.

Thanks to Aldi, the prep for my soup this week is already done—well, it will be as soon as I get back from the grocery store with a jar of their butternut squash soup.

Why I’m Excited About Aldi’s Butternut Squash Soup

I’m talking about Aldi’s Specially Selected Gourmet Butternut Squash Soup, a product I stock up on every fall. There’s also a Pumpkin Maple Bisque option, but I love butternut squash so much that it’s always the flavor I reach for.

I’m not alone in my obsession with butternut squash soup, because it’s also Ina Garten’s go-to comfort food. Her trick is to stir in a splash of apple cider for a dose of acidity to balance out the squash. I channel the Barefoot Contessa by doctoring up this Aldi butternut squash soup with whatever I have on hand in my kitchen. I’ve found that adding a dash or two of apple cider vinegar is enough to do the trick. It takes this soup from good to great, and pairs well with crusty homemade croutons.

This soup combines two of Ina Garten’s most famous sayings into one fall dish: “Store-bought is fine” and “How easy is that?”

Since this is a seasonal Aldi Find, you’d better get to the store quickly and stock up before it’s gone. Otherwise, you’ll be sad and butternut squash soup-less until next year!
