It’s getting to that time of the year when I have to start thinking about school lunches. Last school year, I had a brief reprieve, as my son had been excited about the high school cafeteria’s options, but that didn’t last long. He now wants lunches from home.

My son has grown a whopping five inches this past year. As his growth spurt continues, he has hobbit-like eating habits. This means I often have to plan for a second lunch and even a third dinner. Fortunately, I recently found one solution in Aldi’s freezer section: Bremer Garlic Chicken Skillet.

Why I Love Aldi Bremer Garlic Chicken Skillet

A 21-ounce package of Bremer Garlic Chicken is a complete skillet meal that only costs $4.65. The pasta dinner is made with rotini, chopped chicken breast, broccoli spears, carrot coins, and corn tossed in a very garlicky sauce.  It’s one of those rare freezer finds that actually looks like the glossy photo on the package.

There are two ways of making this skillet: Sauté everything in the package or microwave it with three tablespoons of butter. I think it tastes slightly better if you cook it in a skillet, but my son says the microwave works just fine.

This is a delicious pasta chock full of veggies and meat. As its name suggests, it is garlicky, but I didn’t think the flavor overpowered the veggies, which were as bright and as fresh-tasting as they looked on the bag.

While the meal is perfect as is, it can also serve as a base for a casserole dish—add some cheese and then bake. I also appreciate that it took me less than 10 minutes from the time I opened the package to get the meal on the table. It would take maybe four minutes if I used my microwave.

That said, while the package suggests it serves three, depending on your appetite, a single package may not be enough to feed three people. I think a single package more comfortably feeds two average eaters, like my husband and me. For my family, my husband and I were full on one package, and our teenage son ate his own full package.

This meal will not only be a time-saver when I desperately need to get dinner on the table in between volleyball and diving practices, it will also solve the problem of what I am going to feed my son for lunch. His school has a microwave in the cafeteria, and they provide bowls and silverware, so I put a package with a cold pack into his lunch bag once a week. It’s a winning solution that makes us both happy.
