This boxed mix is everything I love about a weekend bake: a soft crumb, golden edges, and a cinnamon-sugar swirl. (No coffee cake would be complete without the latter.) And there's no skimping on the cinnamon sugar—the baking mix includes a packet that's divided between the middle and top of the cake. I was pleasantly surprised by just how much of that mixture was included.
It only took me 10 minutes to get the coffee cake in the oven. There was no need to soften butter or to haul out the stand mixer; just one bowl and a wooden spoon. I made mine with whole milk, melted butter, and eggs. I had the entire thing assembled before my oven preheated.

How to Enjoy Bob's Red Mill's Coffee Cake
The cinnamon-loaded coffee cake would be a total crowd-pleaser for brunch. I can imagine it topped with powdered sugar and paired with crème fraîche or vanilla yogurt, plus a mound of fresh berries. Even adding a handful of chopped pecans or sliced almonds on top would be delicious.
When I made it at home, we ate it as-is, and it was absolutely delicious. A piece of perfect coffee cake paired with a strong cup of coffee, and I was a happy camper. We ate it warm on the first day, which was so good that I microwaved the leftover pieces the following days. It only needs about 15 seconds to bring back that just-baked softness and wake up the cinnamon swirl.
Come Monday, the leftover coffee cake made weekday breakfasts feel like a continuation of the weekend in the best way. If you want homemade comfort without a lot of fuss, this mix is one to keep on hand. I know I will.
