I'll be heading back to Walmart to stock up, and this time, I actually plan to make birria. I also think it would work well as a sheet pan birria chicken thighs. I would rub bone-in, skin-on chicken thighs with the seasoning and a little oil. Roast them on a sheet pan with sliced onions and halved cherry tomatoes. Serve over rice or tuck into tortillas for a shortcut birria-inspired dinner.
It's so savory and warm, I want to try it on potatoes, French fries, or even sprinkled over popcorn or roasted nuts. My midnight-snacking son still thinks it makes the best steak seasoning, so I'm seeing grilled sirloin in my future.
