I'm a professional recipe tester, so it's embarrassing to admit that, for years, I've used a metal fish spatula as my go-to utensil for almost everything. Why I Love Dollar Tree's Cooking Concepts Cookie Turner
It slides under food so effortlessly that I can easily lift even the most delicate items without breaking or tearing them. It's smaller in size (the main blade measures just over three by two and a half inches), so it won't work for a Spanish Tortilla. This slight drawback in size means I can easily maneuver it in crowded pans or places where I need to get under the whole thing to avoid disaster, such as when handling a fried egg or a soft pancake.
Yes, it's great for sliding warm, gooey cookies off a hot baking sheet, but it's equally good at flipping grilled cheese sandwiches, quesadillas, and, as you might imagine, smashing and flipping meatballs into smash burgers.
It is also the exact right size and shape to slice and serve things like bars or fudgy brownies straight out of the baking pan, which means one less extra dish to wash.
The sharp(ish), straight edges also work well for scraping up stuck-on cheese, loosening stubborn hash browns from the bottom of a pan, or even doubling as a mini bench scraper when I'm working with dough. I'm not sure why I waited so long to buy a better spatula, but I'm happy that I finally did. If this one ever went missing, I would head to Dollar Tree and replace it without a second thought.
