Rachel Knecht turned her home baking into a career in 2016 when she began working as the head baker at The Greenbean Coffeehouse in Seattle, WA. After that, Rachel started her blog Baking with Rachel, began teaching kids' cooking classes, and recipe tested for the cookbook "Let's Stay In" by Ashley Rodriguez. In 2018, she began testing recipes for Simply Recipes.
Rachel had her first recipe published in 2021 and worked as the Editorial Assistant for Simply Recipes until 2022 when she began freelancing. Rachel has had published recipes and articles on Spruce Eats, Eating Well, and has created content for brands.
Favorite kitchen tool: "My mother-in-law gifted me a black Pro Series KitchenAid mixer for my birthday 20 years ago. Everything I know about baking, I learned using this mixer. Even after all these years, the mixer still kneads dough and creams butter and sugar with the best of them."
