Jamie Oliver's Ultimate Chicken Sandwich is the type of lunch that makes me excited about getting back into a routine and revisiting my meal prep game, which often lags a bit during the summer. The ingredient list had me at Dijon and anchovies—a flavor combo that set my expectations for this recipe sky-high, and boy did it deliver.
It's easy to prepare in the morning and take it to work for lunch, or pack the elements up and assemble when you're ready to eat. It's very office kitchenette-friendly. I will be making this on repeat this fall, and no one can stop me.

Why I Love Jame Oliver's Chicken Sandwich
I love the method Jamie Oliver uses for cooking the chicken. You sear the chicken thighs, skin-side down, so the skin gets nice and crispy, and then you finish cooking them in the oven. A layer of Parmesan is sprinkled on top of the chicken before it goes in the oven, adding even more crispness and flavor.
But it's the Caesar dressing that's the real star of this recipe—i.e., this is where the Dijon mustard and tinned anchovies come into play. The recipe includes instructions on how to make Caesar mayonnaise from scratch. I like to make it even easier by using about a cup of my favorite store-bought Caesar dressing, adding one tin of finely minced anchovies (with their delicious oil), and a teaspoon of Dijon mustard. It makes the most delectable spread!
I will definitely use this spread for other sandwiches and even salads. And the cherry on top is the shredded romaine tossed in lemon juice. I really like the crisp texture of the lettuce and the bright, fresh flavor of the lemon.
Put all that between two halves of focaccia bread and you're in business.

Tips for a No-Fuss Sandwich
It almost doesn't make sense how good this sandwich is, considering the minimal effort required. You can make all the components of this recipe ahead of time, so all that's needed is a quick assembly when you're ready. The good news is that all of the components are quick and easy to make.
- Cook, cool, and shred the chicken, then store it in an airtight container or resealable plastic bag.
- Make the Caesar dressing and store it in a jar.
- Rinse, dry, and slice the romaine, then store it in a resealable plastic bag.
- Slice the focaccia bread. (One pro tip if you'll be eating it right after you make it: I recommend toasting the focaccia; it really takes it over the top.)
