If you want me to try a recipe, a solid tactic is to put the words “crispy potatoes” in the title. I simply cannot resist. Added attractiveness: an easy air fryer recipe that gets dinner on the table quickly on a busy weeknight.

While I wouldn’t have thought to serve breakfast-esque crispy potatoes with salmon, when I saw Jamie Oliver’s Air Fryer Salmon With Crispy Potatoes, it was an easy "yes."

How To Make Jamie Oliver’s Air Fryer Salmon With Crispy Potatoes

For this recipe, thinly sliced new potatoes are cooked in an air fryer before placing the salmon and some asparagus on top for a second air fry. At first, I was worried that cooking the salmon on top of the potatoes would make them soggy, but this was not the case. There is still air circulating underneath the potatoes while the salmon is cooking, so the potatoes get crispier and crispier. (This is great intel to apply to other air fryer meals.)

Don’t Love Asparagus?

If you’re not a fan of asparagus, swap in broccolini, green beans, or sliced carrots. Any vegetable that’s about the same size and density should work!

This was a home run for me. Not only did those crispy potatoes totally deliver, it was esentially a one-pan recipe, as the veggies and protein were cooked in the same vessel. So easy, and so good. 

One Note About the Cook Time

I made one crucial change with the cook time: The directions tell you to cook the potatoes on their own for 15 minutes, another 10 minutes after tossing them with fresh thyme, and then for another 10 minutes after adding in the salmon and asparagus. 

I found that the potatoes were sufficiently crisp after the first 15 minutes, so I tossed them with thyme and then added the salmon and asparagus. This was plenty of time for everything to get cooked just right, in my opinion. The salmon flaked easily when I tested it with a fork, and the asparagus was just tender. 

All this said, air fryer temperatures and cook times can vary, so keep an eye on things to determine if you need a second round with the potatoes before adding the salmon and asparagus. If they are mostly browned in the first 10 minutes, you probably don’t.
