French Onion Soup
Simply Recipes / Photographer: Jen Causey, Food Stylist: Margaret Monroe Dickey, Prop Stylist: Josh Hoggle
This is the second most popular soup recipe on our site (after Pozole Rojo) for a reason: it's better than anything you'd order at a restaurant, and pulling it off at home is empowering, like a magic trick. Just follow the directions and you'll be golden. The onions need plenty of time to caramelize, so plan accordingly.

"Albondigas soup is a traditional Mexican meatball soup (albondigas means "meatballs" in Spanish) that my mother has cooked for our family for more than 50 years. It is our version of comfort food."—Elise Bauer, Founder
Cream of Mushroom Soup
Elise Bauer Despite its name, this cream of mushroom soup isn't laden with heavy dairy. Its body comes from tons of mushrooms that you puree with only a touch of cream. It's quite easy and surprisingly elegant. I like to add a touch of miso to mine.
Ham and Potato Soup
Simply Recipes / Elise Bauer
"For this recipe, I'm using Russet potatoes. They become soft and creamy during cooking, absorbing all the wonderful flavors in the broth. Russets are also really starchy, which helps thicken the soup."—Elise

Ham and Bean Soup
Simply Recipes / Elise Bauer
"This ham and bean soup is one of my favorite recipes on the website, and one that my father has been making for the family for decades. He makes a big batch (doubles this one) and because it just gets better as the days go by, we'll enjoy it for dinner one night and then for lunch for several days afterward."—Elise
Potato Leek Soup
Simply Recipes / Elise Bauer
"No need for cream to make this soup creamy! Just blend the cooked soup with an immersion blender or standing blender until thick and smooth. Yukon gold potatoes will produce an especially creamy texture. If you would like your soup to be a little chunky, only purée half of it."—Elise
Egg Drop Soup

Easy Carrot Soup
Nick Evans On nights when the fridge and cupboards are seemingly bare, you can likely pull off this pleasing soup. Serve it with crusty bread, or bake a loaf of quick soda bread to go with it.
New England Fish Chowder
Simply Recipes / Elise Bauer
"For this particular fish chowder, which we all agreed turned out exceptionally well, we are using extra virgin olive oil and butter instead of bacon or salt pork. We are skipping the flour and are instead using cream and the starch from the potatoes to thicken the stew. In place of fish stock, we are using flavorful clam juice instead."—Elise
Borscht
Elise Bauer Beets. You love 'em or hate 'em. Borscht is perhaps the ultimate expression of beets in a recipe (according to...me). Takes on borsch abound all over Eastern Europe; some Ukrainian versions lack beets, in fact. This version clearly has them, as well as chunks of tender-simmered beef chuck. Serve it with rye bread.

Mom's Cold-Season Chicken Soup

Cauliflower Cheddar Soup
Simply Recipes / Elise Bauer
"We made this cauliflower cheddar soup the other day, and wow! Okay, now I don't feel so bad about saying goodbye to summer. It's smooth and creamy without any cream. It's packed with cauliflower and uses just enough cheddar cheese to give it flavor, but not so much that you think you've swallowed a brick."—Elise
