My Mom’s Retro 4-Ingredient Cheese Dip Always Disappears in Minutes

It only needs four ingredients, and one of them is a true throwback.

My parents didn’t entertain much when I was growing up, as my dad was always working. But anytime they’d open their house to friends, I could expect my mother to make her signature cheese dip. The smell of melting cheese and rich tomato in the oven as the house filled with people for a football game or holiday was pure excitement to me. 

The texture of the dip, scooped into tortilla chips, was melty and swirled with peppers, tomatoes, and onions from a jar of salsa, giving it more body than your basic queso. My mother would spoon some into a bowl and let my brother and me squirrel it away upstairs while we watched movies away from the grown-ups. 

The Magic of Velveeta

I’d like to tell you that it’s these memories that make me think of the dip so fondly, but in fact, it’s the Velveeta. You heard me. Velveeta—the most processed food I can think of. If you’re Gen X, your childhood memories, like mine, are likely studded with recipe concoctions that leaned heavily on cans and boxes and microwaves as our mothers found lives outside the house (a worthy trade I didn’t understand at the time). 

Though I eventually became an adult who now grows their own tomatoes, cans their own salsa, and has even studied cheesemaking, nothing has ever successfully replaced the Velveeta in this recipe, though I have certainly tried. It melts deliciously and undramatically every time, seamlessly integrating all of the other ingredients. So, this yellow box of processed cheese gets a pass from me.

Unlike my parents, I entertain at my home all the time, and it’s become an enduring joke that all of the things on the table, from the plates to the honey to the vegetables, are all made or grown by me—I’m annoying that way. 

So, when I set this absolute brick of a dip on the table, my friends will dive in, then look to me with wide, appreciative eyes, awaiting some storied explanation of the complicated ingredients that must lie within. And I quietly smile, explaining simply that it’s “Mom’s secret.”

Tips for Making My Mom’s 4-Ingredient Tomato Cheese Dip

Your choice of salsa is what will determine the level of spice in your dip. I always choose a fresh salsa from the refrigerated section at the grocery store, but a jarred version will work fine. Choose a hotter salsa for more of a kick, and, if you dare, layer in sliced pickled jalapeños. You could also add any hot sauce you enjoy to the salsa, but remember not to go overboard for the sake of your guests. 

I always choose a Mexican or “Mexican-style” shredded cheese mix, which usually has cheddar, Monterey Jack, and queso cheese in it. Your local grocer will have a similar blend, but you could also opt for only cheddar if you prefer more of a nacho feel to your dip. 

The key to shredding Velveeta successfully is to freeze it first. Once it’s firm from the freezer, you can hand-shred it using a grater (hold the cheese in a towel as it’s uncomfortably cold), but the real hack is to use your food processor or rotary grater, if you have one. You’ll end up with a nice, even shred that will defrost in minutes.

Ingredients

  • 1 (28-ounce) can crushed tomatoes, divided

  • 32 ounces tomato salsa

  • 1 (16-ounce) box Velveeta Original cheese, shredded, divided (or 16 ounces Velveeta shreds)

  • 8 ounces shredded Mexican cheddar cheese blend or cheddar cheese, divided

  • Tortilla chips, for serving

Method

  1. Preheat the oven to 400°F.
  2. Layer the dip:

    In an 8-inch oven-safe crock or baking dish, combine 1/2 cup of the crushed tomatoes and 1/2 cup of the salsa. Use a spoon to mix them together and create an even layer, going all the way to the edges of the crock. Combine the shredded Velveeta and shredded cheese. Sprinkle 1 cup of the cheese mixture onto the tomato base. Try to create a full, even layer that goes all the way to the edges. 

    Repeat this process, keeping the layers even and alternating between the tomato/salsa layers and the Velveeta/cheese layers. You should have enough for 4 to 5 layers of each. End with a layer of tomatoes and salsa on top (you’ll have a little more salsa than tomatoes).

  3. Bake:

    Place the crock on a baking sheet—this will make it easier to pull the crock out of the oven when the dip is done, and will also catch any drips if the dip bubbles over as it bakes. Bake until the cheese is melted in a ring around the edges of the crock, even if the middle doesn’t look fully melted, about 1 hour.

    Remove the crock from the oven and stir the dip until all the ingredients are melted together, about 30 seconds. Serve immediately with tortilla chips.

    If you have leftovers, they can be stored in an airtight container for up to 5 days. To reheat, transfer the amount you plan to eat into a microwave-safe bowl. Microwave on high, covered, for about 2 minutes, then stir and serve.
