It finally feels like autumn is in the air, and I am in my element watching trees change to golden, leaves fall, and the seasons change. After five years in California, where season changes were minimal, it’s been a treat to have the seasons back in action, segmenting the year.
That being said, it feels like winter is eight months, spring is one month, two months for summer, and max one month for fall. But that makes it all the more important to enjoy this short-lived season while we can. I'm making dishes that perfectly skirt the line between easy and minimal prep and cozy.

Feta and Tomato Stuffed Spaghetti Squash

Squash is a hot topic in my household. When I first started dating my husband, he came to my apartment for dinner and I made him a stuffed squash. It was light, delicious, and nutritious. After eating his squash, he complained of a stomach ache, blaming it on my beautiful dinner, and most definitely not the sriracha burger with onion rings he had eaten earlier that day. Since then, he’s sworn off squash. This means that I am constantly looking for recipes he’ll try, and I’ve found that if there is cheese and garlic involved, there’s a greater chance that he’ll give it a go. This week I’m trying this simple, five-ingredient dinner. If he likes it? I win! If he doesn’t? I’ll have a delicious lunch for the next day, so it’s really a win-win situation.
Slow Cooker Chicken Tacos

If there’s one foolproof way to get dinner on the table without much brainpower, it’s the slow cooker. This week, I’m solo parenting, which means I have little to no time to think about dinner. But with a toddler, a no-planning dinner often means a dinner consisting of applesauce pouches and cereal. Every Tuesday at daycare they serve tacos, and according to his teachers it’s his favorite meal, so I’m giving it a go for dinner this week. I’ll be making this recipe with a mild salsa for his sensitive taste buds.
Simple Celery Salad

Celery has long been underestimated, just another vegetable on a crudités platter. Recently, I’ve gotten into celery salads, a lettuce-free salad that doesn’t wilt, gets better with time, and is a great way to use up your leftover stalks. This celery salad is my go-to for easy hosting since it’s unexpected enough to feel special, and I usually plan menus that I can prep ahead. Because this is dinner, I’ll serve it with some grilled white fish or salmon (whatever is on sale!) and serve it with some crusty sourdough for a well-rounded meal.
Tom Yum Soup
Aaron Hutcherson Recipe Developer Aaron Hutcherson says, "Tom yum is a traditional Thai hot and sour soup that is found all over the country. There are many variations of tom yum out there, from creamy versions with coconut milk to clear broths, or ones that vary based on the protein, from shrimp to chicken to pork." This is an easy, clear version that takes just minutes to throw together. I'm using frozen shrimp for ease.

Remember when baked feta pasta was all the rage on social media? Me too. I loved it, making it almost weekly for a few months before it found its way off of my rotation. It's time to bring it back! I'm going to use my leftover tomatoes and feta from the squash this week (thanks, Costco) to make this one-dish meal. When buying feta, look for a sheep’s milk feta block (not crumbles), preferably in brine.
