Breakfast is the most important meal of the day, and whether that's 100% true or not, I personally always make an effort to start my mornings with a light bite to go with a cup of coffee or tea. Whether it's a few shortbread cookies, a bowl of yogurt and granola, or an apple eaten on the go, I need something to keep me going until lunch—because we all know how important it is to stave off the hanger, I mean hunger.
In the summer, I often lean on quick no-cook breakfasts, just your basic slicing, spooning, and assembly, or maybe buzzing in a blender. The most I'm willing to do in the way of prep is to toast a few slices of bread. If you're anything like me, and want more ideas for easy, light, and quick breakfasts, you've come to the right place! From refreshing (and caffeinated) smoothies to make-ahead overnight oats, these recipes are my summer morning lifesavers, and I hope they become yours, too.

Simply Recipes / Meghan Splawn
"Making these energy balls takes just one bowl and about 10 minutes—and if you opt to weigh your ingredients, you don’t even need measuring cups. They last about 2 weeks in the fridge (if they don't get eaten up first!)"—Meghan Splawn, Recipe Developer
4-Ingredient Strawberry Mousse
Simply Recipes / Molly Allen
"Dress it up or down and serve it anytime, but note that it does require 1 hour to chill in the fridge."—Molly Allen, Recipe Developer
2-Ingredient Overnight Oats
Simply Recipes / Mark Beahm
"Since the milk is the only thing flavoring these oats, choose a flavorful and sweet one that you like. I like Silk’s dark chocolate almond milk and Ripple vanilla plant-based milk. Skip the unsweetened stuff."—Laurel Randolph, Associate Editorial Director
Tropical Berry Smoothie
Simply Recipes / Coco Morante
"As for the juice, my favorites are pineapple (so tangy!), then orange juice, then apple juice. Really, any juice will work as long as it’s sweet enough."—Coco Morante, Recipe Developer

3-Ingredient Sprinkle Toast

"An important thing to note about this breakfast confection is that hagelslag sprinkles are very different from the waxy, flavorless sprinkles you can get stateside. While I admit to having a soft spot for the American version, the delicate texture of hagelslag and more intense flavor really makes this toast special."—Molly Adams, Recipe Developer
Coffee Smoothie
Simply Recipes / Alison Bickel
"If you’re using cow’s milk, I’d recommended at least 1% milk fat. If choosing a plant-based milk, look for an unsweetened variety that has a bit of body, such as oat milk or coconut milk."—Katie Morford, Recipe Developer

"Serve it on a bagel for even more breakfast-y vibes."—Devan Grimsrud, Writer
