The Easy Apple Cookies My Whole Family Loves

They make a great breakfast or snack.

When I was a kid, these cookies became a favorite once my mom told me that they were okay to eat for breakfast. They were a frequent fall offering over the years, making their way into lunches, snacktime, and “I just need a little something” moments.

When I asked my mom about the cookies 20-plus years later, she had neither a recollection of their origin, nor a recipe to share. So, I developed a version of my own to share with my family.

The tastes and textures in these dense cookies are so satisfying, as the sweet apples and tangy cheddar rub elbows with oats and raisins. I love that they keep well in the fridge, and I’ve doubled and tripled the batch to serve to groups at parties, camp-outs, and to simply have on reserve when things get busy.

I’m happy to carry on the tradition of cookies for breakfast in my home, with a satisfying sense of nostalgia and personal joy every time I make them.

Notes and Substitutions

  • Use extra sharp cheddar: It has a stronger taste and better complements the apple than a milder version.
  • Which apples to use: Gala apples make a sweeter cookie, though I love Granny Smith for their tang. However, whatever favorite apples you have on hand will work.
  • Optional raisins: Though the raisins are optional, I highly recommend them. Or substitute cranberries, currants, chopped dates, or 2/3 cup of any dried fruit.
  • Honey substitute: Instead of honey, you can use 1/3 cup packed dark or light brown sugar. This will result in a slightly drier cookie, though the difference is barely noticeable.
  • Skip the applesauce: Vegetable oil can be used as a substitute for applesauce, resulting in a less apple-forward cookie.

Apple Cheddar Oat Cookies

Ingredients

  • 3/4 cup (105g) all-purpose flour

  • 1/2 teaspoon baking powder

  • 3/4 teaspoon ground or grated nutmeg

  • 1/2 teaspoon kosher salt

  • 1/4 cup smooth applesauce

  • 1/3 cup honey

  • 2 teaspoons vanilla extract

  • 1 large egg

  • 1 medium apple, such as Granny Smith or Gala, small diced (about 1 1/2 cups)

  • 1 1/2 cups (155g) old-fashioned oats

  • 1 1/4 cups shredded (105g) sharp cheddar cheese

  • 1/2 cup (85g) raisins, optional

Method

  1. Preheat the oven to 375ºF.

    Line a sheet pan with a silicone baking mat or parchment paper.

  2. Combine the wet and dry ingredients in separate bowls:

    In a small bowl, whisk together flour, baking powder, nutmeg, and salt. In a separate large bowl, whisk together the applesauce, honey, vanilla, and egg until combined.

  3. Mix together:

    Add the dry ingredients to the wet ingredients and whisk until no dry spots remain. With a spoon or spatula, stir in the apples, oats, cheddar, and raisins, if using, until evenly distributed. The mixture will be sticky and a little loose.

  4. Shape the cookies:

    Scoop 1/4 cup portions (about 60g) and using your hands, shape into rounds approximately 3/4 inch thick (like forming a burger). Arrange the cookies on the sheet pan. You should have 13. They will not spread, and can be baked close together.

  5. Bake:

    Bake for 16 to 18 minutes. The edges will have begun to brown, and there will be a sizzling sound. Check the bottom of one of the cookies: there should be visible browning. They will be soft, but will firm up as they cool. Transfer to a wire rack and cool completely before eating.

    Store in an airtight container in the refrigerator for up to a week, or in the freezer for up to a month.
